• Deputy Executive Chef
£30,000 - £35,000 plus company car
Having taken 28 former Edwinns and Blubeckers restaurants under our wing, we are setting up a sister company in the South East, called Home Counties Pub Restaurants, to help look after things. Brunning and Price has been Pub Group of the Year four times now, and we consider ourselves to be a relaxed, friendly but professional crowd. We’re very proud to say that our pubs have been voted ‘County Dining Pub of the Year’ by the Good Pub Guide on some 25 occasions, and we’re determined to set the bar similarly high in our Home Counties operation.
We’ve recently appointed an Executive Chef who will need a deputy to assist in reorganising, redeveloping and inspiring the existing chef teams in the pubs we’ve taken on board. In addition, with further new pub openings you’ll need to help put together kitchens from scratch; recruiting, training, and bringing on teams of chefs, and developing fresh menus - so you’ll need to be a great communicator who gets a buzz out of bringing people on and is able to inspire others. A significant part of the role will be ensuring our kitchens are really well run, so that Gross Profit and Wage targets are met, hygiene standards are excellent, and that all aspects of good kitchen management are maintained and developed. You’ll need decent business acumen, know your way around a spreadsheet, and be no stranger to a computer.
We imagine the person we’re looking for will be a senior chef with extensive experience in quality fresh food environments, who is not afraid to set high standards. You’ll need a non-corporate, down to earth style and to quickly understand and embrace our culture. We imagine you’ll be in your whites for much of the time, motivating and mentoring our existing chefs. Our operational heartland will be in the Godalming area, where we are establishing an office and a training kitchen. The salary package will be in the region of £30,000-£35,000 plus a company car.

You’ll have the weight of a good solid company on hand should the need arise, and you’ll be decently rewarded for the effort you put in - all our senior crew take a direct cut of the profits each month, with managers earning between £30,000 and £45,000, living in or near their pubs in good quality accommodation which we provide, and deputy managers earning up to £25,000, with plenty of opportunities to progress.
Things are going pretty well right now (touch wood), and we’re involved in a busy programme of expansion in the North and South so we’re looking to recruit crew at all levels. We’d like to take people on board sooner rather than later so we can train you up and hit the ground running when new pubs come on stream.

We’re looking for roving chefs to come on board. Your job will involve travelling from pub to pub covering holidays and other absences, and it is an excellent stepping stone into the company for sous chefs and head chefs of the future.
